Easy Garden Veggie Pie

2 c. chopped broccoli
1/2 c. chopped onion
1/2 c. chopped green bell pepper
1 - 1 1/2 c. shredded cheddar cheese or a combination of cheddar and american
3/4 c. bisquick
3 eggs
salt and pepper to taste.

Boil the broccoli with the onion and green pepper until just done. Drain thoroughly.

Mix the vegetable with the cheese and put in greased large pie pan or any other size you prefer.

Beat remaining ingredients til smooth.

Pour into the pan on top of the vegetables.

Slices of tomato can be placed on top and some extra shredded cheese if you like.

Bake at 350 degrees for 35 to 40 minutes.

Note: A 10 oz. package of frozen broccoli can be used instead of fresh.
