Turtles Named Rolo

"Gotta get a Rolo, gotta get a Rolo..."

20 small mini pretzels
20 Rolo chocolate covered caramel candies
20 pecan halves (toast them for 10 minutes in a pan or oven for best flavor)

Preheat oven to 300 degrees F. Arrange the pretzels in a single layer on a foil lined cookie sheet. Place one Rolo chocolate covered caramel candy on each pretzel. Bake for 4 minutes. While the candy is warm, press a pecan half onto each candy covered pretzel. Cool completely before storing in an airtight container.

You can do them in the microwave if you want. Put them on wax paper or freezer paper on a flat plate or cutting board. Microwave on high for 30 seconds or less, just until chocolate is soft enough but not melting. Then press the pecan into it as above.

Easy Butter Mints

* 1/2 cup butter, at room temperature
* 3 3/4 cups powdered sugar
* 1 tablespoon cream
* 1/8 teaspoon peppermint extract
* red food coloring

In a mixing bowl, cream butter well; blend in powdered sugar gradually, mixing until smooth. Add cream, peppermint extract, and food coloring (one or two drops, you want them pink not red!); blend well.

Spoon batter into a cake decorator tube and using a shaped tip, press shapes onto waxed paper. Let mints set up for 30 minutes. Store in an airtight container in a cool place.

Note: an alternative way to shape mints is to roll into a small ball and press slightly with the bottom of a glass until disk shaped like the photo. Makes 3 to 4 dozen mints.
