Healthy Flax Muffins

1 cup flax MEAL golden or regular
2 tsp Baking Powder
1 tsp Baking soda
1 tsp cinnamon
1/2 tsp salt
1 tbsp oil (I use grape-ola)
2 eggs
2 tsp vanilla extract
2 over ripe mushy mashed bananas(or your choice of fruit - blueberries would be good)
1/4 cup Splenda (granulated pourable)
Throw in a handful of ground crushed almonds or cashews (natural unsalted)
(I also add 1 tbsp of coconut oil) optional

Bake in muffin cups with liners 350 F. For 20-30 minutes or until tooth pick is clean!

Fried Dough

Bread dough
Light oil for frying
Cinnamon Sugar for topping

Cut dough into pieces & stretch out into a disk. Nana would make a hole in the middle so it would fry up more evenly. Place into hot oil & fry on both sides until golden brown. Drain on paper towels. Sprinkle with Cinnamon Sugar.

Cantaloupe A la Mode

1 ripe cantaloupe
Vanilla ice cream

Slice the cantaloupe in half. Scoop out the seeds. Put a big scoop or two of vanilla ice cream in the center. Eat with a spoon. Note: if you aren't hungry enough to eat an entire half of a cantaloupe, cut the cantaloupe into cubes and serve it over the ice cream.
