Cheesy Salsa Chicken Breasts

Preheat Oven: 350įF
4 boneless, skinless chicken breasts
1/2 a jar of salsa
1 cup shredded Sharp cheddar cheese
garnishes: green onions & sour cream

Put 4 boneless, skinless chicken breasts into an 8 X 8 pan sprayed with Olive Oil Spray. Pour the Salsa over the chicken. Bake in 350-degree oven for about 25 min. You can check before that time but my breasts were thick.

Remove from oven & add the cheddar cheese over the top of each breast. Return to oven until cheese is melted & bubbly. (another 10 minutes) Top with a dollop of sour cream & chopped green onions.

Cola Chicken

4 skinless, boneless Chicken Breasts
1 Cup Ketchup
1 12 oz. can of Cola (diet or regular)

In a deep frying pan mix ketchup and cola until smooth, add chicken. Cover & cook for 45 minutes on med-low heat (just barely bubbling.) Take cover off, remove chicken and keep warm.

Turn heat up to med-high and cook gravy until thick. This will take about 15 minutes. Add chicken back to pan for a few minutes to heat, spoon thickened gravy over breasts. Sauce should be thick like BBQ sauce.

If you have leftover sauce you can freeze it to use on other meats like pork chops & ribs.
