Cheesy Polenta (see photo insert)

2 cups water
1/2 teaspoon salt (optional)
2/3 cup (fast cooking or instant) polenta or stone-ground yellow cornmeal
2 tablespoons grated Parmesan cheese

In a deep saucepan, bring water & salt to a boil. Gradually stir in polenta. Cook, stirring, until thick & creamy, about 5 minutes. Stir in the cheese. Let set for a few minutes to thicken. You could also pour into a mold or a loaf pan and slice it when it sets up. Serve with butter or sauce.

Fried Rice (see photo insert)

2 tsp. Canola or Peanut oil
1 cup each diagonally sliced scallions, celery, mushrooms
1/2 cup frozen peas
1 T. Soy sauce
1 lightly beaten egg
1 cup cooked rice

In a large nonstick skillet heat the oil, add the vegetables & stir fry over medium high heat for 4 minutes. Add rice, peas & soy sauce & stir fry another 3 minutes. Stir in the egg until it's set.
