Savory Couscous

2 T. butter
1 onion, finely chopped
1 small carrot shredded
1 - 2 garlic cloves, crushed
1 cup couscous
2 cups chicken stock
2 tablespoons fresh parsley, chopped
salt and pepper

Heat butter in pan (which has a lid). Add onions & carrots, stir & cook until soft. Stir in crushed garlic. Cook for 2 minutes. Add couscous, stir. Add chicken stock. Bring to a full boil then remove from heat, cover & let stand 10 minutes. Stir in parsley. Add salt & pepper. If you use Israeli couscous in this recipe (which is larger in diameter) you will need to cook it for 5 minutes and then let it stand for 10 minutes.

Brown Rice with Mushrooms and Onions

Beef base
brown or brown basmati rice
vadalia onion
mushrooms

Saute chopped onions and mushrooms. Cook rice with beef based water, stir in mushrooms and onions when done or you can cook it with the rice.
