Green Beans

Big bunch of fresh green beans, washed & ends snapped off (leave them long)
1/2 cup water
1 T. Olive oil
1 pat of butter
1 clove of garlic, minced
(optional) Parmesan cheese

Put green beans in large frying pan with the water. Put a lid on it & turn the heat to med-high. Cook 5 min. Don't let water cook off or they'll burn. Pour remaining water off. Drizzle the olive oil over the beans & toss, put back on the heat and stir-fry for 5 to 7 min. until beans begin to show signs of blistering (but don't actually brown them.) In last 2 min. of cooking put the garlic in the pan & stir-fry with the beans. Remove from heat. Sprinkle with Parmesan, and put the lid on for a few minutes. If you don't have fresh garlic then sprinkle with garlic powder when you remove from the heat to add the Parmesan. Toss and serve.

Chinese Stir-Fried Asparagus

~ Val "This tastes good using green beans also!"

1 tsp. sesame oil
1 pound of asparagus, woody stems cut off and each cut into shorter pieces
1 T. soy sauce
1 T. water
1 tsp sugar
2 T. toasted, slivered almonds (optional)

Stir fry the asparagus in the oil for 3 minutes. Add the soy sauce and water. Cook 2 more minutes. Add the sugar and cook another 30 sec. Top with the almonds.
