Easy Cheesy Eggplant or Zucchini Casserole

1 C spaghetti sauce
1 egg or 1/4 cup Eggbeaters 1 cup low-fat or Fat Free cottage cheese
2 TBL grated Parmesan cheese
1 eggplant or 1 large zucchini--sliced 1/2" thick longways

Grill eggplant or zucchini on George Foreman grill or in your oven broiler for about 5-10 min until soft and slightly charred.

Spray an 8x8 baking pan with nonstick spray. Put eggplant/zuke on bottom of pan. Spread spaghetti sauce over. Mix egg, cottage cheese and mozzarella cheese and spread it over sauce. Sprinkle with Parmesan cheese. Bake in a preheated 350*F oven for 30-35 min. and serve hot. 4 servings

This can also be made in the microwave. Cook on high for 10 minutes, then on medium for 15 minutes. It turns out better in the oven though because the cheese browns.

Note: don't skip the part where you grill the eggplant or zucchini, I tried it without doing that and it doesn't come out so great. I think the grilling removes some of the water, and the charring brings out some flavor.

Stuffed Eggplant

Ya just scoop out the eggplant and chop into chunks and mix with ground meat (seasoned like Italian meat balls), stuff the mixture back into the eggplant and bake with sauce.
