Meat Stuffed Artichokes

1 pound Ground Beef
1 egg
1/2 cup bread crumbs
1/2 cup Parmesan or Romano Cheese
Garlic Powder to taste, Salt & Pepper
4 to 6 fresh artichokes

Mix the meat filling and refrigerate. Cut the tips off the artichokes, rinse well and rap them upside down on the counter a few times. Cook in salted water for 30 minutes. Drain and Cool. Stuff with the meat mixture randomly by pulling on the leaves to make a pouch. Place in a roasting pan and pour a thin tomato sauce over all. Cover and bake at 350 degrees F. for 45 minutes.

Artichoke Surprise

Fresh artichokes washed, 1 per person
spaghetti sauce

Cut the nipples off each leaf if you would like, boil them in salt water, not too much salt though, it will ruin them. Boil with lid about an hour or until a leaf from the outer edge falls off without having to pull it. Drain very well upside down in the strainer. Then baste with either spaghetti sauce (Sharon's way) or garlic and butter (Cheech's way) with ONLY fresh garlic cut up or smashed and mixed with melted butter.
