Cream of Broccoli Soup

3 cups broccoli chopped fine
2 cans chicken broth
1 tsp onion powder
2 T. butter or I Can't Believe It's Not Butter Liquid (spray)
1/4 cup liquid coffee creamer
2 ounces Velveeta cheese cut into cubes
1/4 cup mashed potato flakes (or more if you like thick soup)
salt & pepper

Cook the broccoli in the chicken broth with the onion powder and S & P for 10 minutes until tender. With a slotted spoon, remove 2 spoonfuls of broccoli to a bowl. With a hand held blender blend remaining broccoli/broth mixture until smooth. (or use a hand held potato masher) Add the reserved broccoli back to the pot. Add the butter and Velveeta and stir until melted (reheat if necessary to melt the cheese but do not boil.) Stir in the coffee creamer. Add the mashed potato flakes and mix well. Add salt and pepper as needed.
