Spinach and Strawberry Salad

1 or 2 bags baby spinach
1 qt. strawberries, washed & cut up
1/4 C. slivered almonds
1/2 Tbs. butter or EVOO
2 tsp. sesame seeds
1/4 C. apple cider vinegar or balsamic vinegar
1/2 C. lite or extra virgin olive oil
1 Tbs. honey
3 Tbs. sugar (or 3 pkts Splenda)

In pan heat butter & toast almonds for 2 minutes, add sesame seeds, toast for a minute more. Add to vinegar and oil, then mix in the sugar & honey. When ready to serve, place spinach & strawberries in a large bowl. 5 minutes before serving add the dressing and toss well. Servings: 6-8

Italian Potato Salad

Boil some potatoes, let cool, peel. When potatoes are room temp. slice them into a bowl. You can chunk them or slice, up to you. To that add several ripe tomatoes chunked, sliced sweet onion, several fresh basil leaves finely chopped and salt & pepper. Over that drizzle some very fine Extra Virgin Olive Oil. Toss to coat.
