California Roll in a Bowl

3 cups of cooked rice, cooled
6 leaves Boston lettuce
2 T. rice wine vinegar
2 T. Canola oil
1 1/2 tsp. sesame oil
2 tsp. sugar
6 ounces imitation crab meat, shredded
1 avocado, peeled, pitted and diced
1 cucumber, halved and thinly sliced
4 radishes, thinly sliced

Line 6 serving bowls with lettuce leaves. In a medium bowl combine vinegar, oils, & sugar. Season with salt & pepper. Add avocado, cucumbers, radishes & rice. Toss gently to coat. Arrange imitation crab meat over lettuce. Top with the avocado mixture. Garnish with toasted sesame seeds.

Pineapple Slaw

I use pre-shredded cabbage and carrots, half of a pineapple fresh-cored and peeled. Dice the pineapple, save all juice, you can put it in your chopper with roasted almonds and a small piece of green pepper. Add some Rice Vinegar & a couple T. of sour cream or yogurt (vanilla, orange or pineapple.) Let it soak for a few hours and then stir again. It would be good topped with grilled chicken or shrimp.
