Chi Chi's Potato Salad

5 Russet or Idaho potatoes
4 eggs, hard boiled
1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped celery
1 tsp. salt & 1/2 tsp. pepper
Hellman's Mayonnaise

Cut potatoes in half and boil until tender. Cool & peel, then cube and place in a large bowl with the chopped veggies, S&P. Peel and cut the eggs into pieces, add to potatoes. Mix with the mayo.

Sharon's Potato Salad

4 to 6 Eggs
Handful of Chopped Onion
Handful of Chopped Celery
Half-and-Half (coffee creamer)

Boil the potatoes, remove skin under cold water. Cut into chunks. Hard boil the eggs, peel, separate whites from yolks, chop whites. Mash the egg yolks and cream them into the mayonnaise and a splash of half-and-half. Add salt to taste. Blend everything together well and chill overnight.
