Char Mercer's Wasabi Dip

Mix, cover and refrigerate:

1 cup mayo
4 tsp soy sauce
1 1/2 tsp sugar
2 tsp real lemon juice
2 tsp wasabi paste (sold where the sushi is sold. It looks like a toothpaste tube,
or find it in the Oriental foods section near the soy sauce.)

Then:

3 lbs FRESH asparagus, washed and tough ends removed.
Package of FRESH Snap peas.

Blanching the vegetables: Bring a pot of salted water to a boil, and ready a large bowl of ice water w/ice cubes in it. Place asparagus in boiling water and stir around until the color and firmness start to change. (about 2 min.) Test by taking one and toss it into ice bath. Try it. Usually you can tell when they are just starting to droop. Remove with slotted spoon and place in ice water a few minutes.

Place Snap Peas in boiling water and stir around until the color and firmness start to change. (about 3 min.) Remove and place in ice water a few minutes. The ice bath helps keep the color and stops the cooking process so they don't over-cook. Drain on paper towels, arrange on plate, cover and refrigerate until serving time.
