Veggie Quesadilla

1/4 Cup salsa
1/4 cup drained canned black beans, rinsed
1/4 cup zucchini, shredded
2 (6-inch) fat-free flour tortillas
1/4 cup shredded Monterrey Jack cheese

In small bowl, combine salsa, beans, and zucchini. spread the mix over 1 tortilla. Top with the cheese, cover with another tortilla. Heat an 8 or 10 inch nonstick skillet over med heat. Carefully cook quesadilla, turning once, until cheese is melted, about 1-2 minutes on each side. Cut into quarters (I use kitchen scissors.)

~ Val "I mix this up a lot. Sometimes I use other kinds of beans, even baked beans. Other times I use chopped green peppers and onions instead of zucchini. Or all of the veggies! Scallions are really good in this."
