Ice Box Cake

16 cinnamon graham cracker sheets
2 pkgs instant butterscotch pudding, prepared according to directions on box
8 oz container Cool Whip

Place a row of graham crackers along the bottom of a cake pan. Cover crackers with pudding. Place another row of crackers on top of the pudding. Spread cool whip across the top and refrigerate overnight. The graham crackers absorb the moisture from the pudding and it turns out tasting like cake.

(You can make this a "diet" recipe by using low fat graham crackers, sugar-free, fat-free instant pudding, and fat-free cool whip.)
