Lo Mein For One

Boil water and cook 2 ounces (dry weight) rice noodles, brown rice spaghetti, or regular spaghetti. Drain. (I use brown rice spaghetti or Dreamfield's spaghetti.)

Mix together: 1/4 cup soy sauce, 1 T. water, 1 tsp. Cornstarch, 1/4 tsp. powdered ginger, 1/4 tsp garlic powder (or more). Stir & Set aside.

Stir Fry over med-high heat in a pan with 1/2 tsp olive oil:
2 tbsp. chopped onion
1 cup fresh mushrooms, chopped
1 cup broccoli chopped
1 or 2 mini carrots slivered

When veggies are almost done, stir the soy sauce mixture, add it to the pan, mix it in and simmer for a few minutes. Then dump in the drained spaghetti and mix it all up. Put a lid on it. Turn off the heat and let it set for a few minutes before serving. Serve with extra Soy Sauce.
