Fried Rice
2 servings

2 tsp. Canola or Peanut oil
1 cup each diagonally sliced scallions, celery, mushrooms
1/2 cup frozen peas
1 T. Soy sauce
1 lightly beaten egg
1 cup cooked rice

In a large nonstick skillet heat the oil, add the vegetables and stir fry over medium high heat for 4 minutes. Add rice, peas and soy sauce and stir fry another 3 minutes. Stir in the egg and continue stirring until egg is set, about 1 minute.
