French Toast

2 slices day old or longer white bread
2 eggs, beaten, or equivalent in Eggbeaters
1/4 tsp vanilla
1 tsp sugar or 1/2 pkt Splenda
maple syrup, regular or sugar-free

Beat the vanilla and sugar into the eggs. Dip each slice of bread into egg and coat both sides. Don't leave in too long or it will soak up too much egg. Place into a preheated skillet with some melted butter. Sprinkle tops with cinnamon. Cook until eggs are set on one side. Flip and cook another 1-2 minutes. While still in the pan, use the spatula to cut the bread slice into triangle shapes. Serve with syrup and more butter.
