Baked Rice

2 beaten eggs or egg substitute
1 large jar chunky spaghetti sauce
1/2 cup Parmesan cheese
1 cup cooked ground turkey or ground beef (I used smashed up Boca burgers)
3 cups cooked brown rice
8 oz. low-fat ricotta cheese (or cottage cheese)
2 tbsp. grated Parmesan cheese (for topping)

Add eggs and 1/4 cup Parmesan cheese to rice. Set aside. Combine remaining 1/4 cup Parmesan cheese and ricotta. Set aside. Combine sauce and cooked turkey/beef. Spoon 1 cup rice mixture into a lightly sprayed glass pan. Cover with half the ricotta cheese mixture and 1/3 of the sauce. Repeat. Top with remaining 1/3 of the sauce and 2 tbsp. grated Parmesan cheese. Bake at 350 degrees for 60 minutes. Serves 8.

You can also prepare this in several small loaf pans and freeze them uncooked. Cook before serving.
