Jim's Pork Chops & Brown Potatoes

4 pork chops
6 potatoes
1/2 stick butter
S & P (or other seasoning of choice for chops)

In a large pan heat 1 T butter over medium high heat and place the pork chops in. Season on both sides. Peel and cut the potatoes into bite sized pieces. Put potatoes in a pot of water so water covers them about 1 inch. Boil potatoes for 15 minutes while pork chops cook. Remove pork chops from pan and keep warm. Add the rest of the butter to the pan. Drain the potatoes and add them to the pan. Brown the potatoes, turning frequently and scraping the pan for bits from the chops. Serve.

~ Val "When we both worked full time this is the meal he would cook for me when it was his turn to cook. It's delicious and I now make it for him pretty often. He also likes Ham and brown potatoes made the same way."
