Tabbouleh
Makes 6 servings

1/2 c fresh lemon juice
1 c. bulgur
1 tbls. olive oil
3 tomatoes, chopped
1 c. chopped parsley
1 red onion, chopped
3 scallions (green part only) sliced
2 garlic cloves, crushed
1 lemon sliced

In med. saucepan boil juice and 1 1/2 c. water. Stir in bulgur, oil, salt and pepper to taste. Remove from heat, cover and sit (20 min)

In bowl, combine tomatoes, parsley, onion, scallions and garlic. Add bulgur, toss. Cover and chill about 3 hrs.

Serve garnished with lemon slices and pita bread.
