Low Carb Eggplant

1 eggplant
fresh mushrooms
red peppers
eggs
bread crumbs
garlic & fresh basil
sauce
cheese of choice

slice your eggplant like you would for egg plant parm, dip in egg and bread crumbs lightly and brown in olive oil-- take out and put on paper towels. saute your peppers and mushrooms- I sauteed in fresh "smashed garlic and fresh basil" put layer of sauce on bottom of casserole dish or baking pan, simply layer your eggplant with cheese, mushrooms and peppers, sauce, another slice of eggplant, like lasagne, I did it 3 high - top with mozzarella or fresh grated parm, bake in oven for 15-20 minutes, Delicious!!
