Pineapple Boats

Whole fresh, ripe pineapple
Maraschino cherries

Wrap a tea towel around the green top of the pineapple and twist it off. With a large sharp knife cut the pineapple in half, then cut each half in half again, then one more time until you have 8 boats. With a smaller sharp knife take off most of the core on each boat (core goes through the center and is usually tough.) Then with the same knife cut the pineapple from the rind, leaving it in the rind. Then cut it into chunks. Put cherries on a toothpick and stick into every other chunk. (picture doesn't show that but it looks so pretty when there is a cherry in more than one.)
