Nanu Chuck's Frittata
We called it Frit-tut.

1/2 stick of pepperoni, cut up
Hard Salami cut up
6 Eggs
1/4 lb ricotta
6 slices Provolone (NOT smoked), cut into small chunks
6 slices Mozzarella, cut into small chunks
1/4 c. Milk

Fry pepperoni and salami (DONT THROW AWAY THE GREASE.) Whip eggs, fold in Ricotta, cheeses. Add Milk. Mix. Add to frying pan with the grease. Cover, very low heat, stir occasionally. When water forms, drain it by putting lid slightly to side. Keep turning, patting into a disc. When almost completely cooked, place a large dish over pan and slide onto plate. Then slide back into the pan to cook other side. Put lid back on and cook a few minutes more. Mungia mungia!
