Chicken Chow Mein
You could also use turkey for this.

3 cups cooked chicken cut into strips
1 cup celery, cut diagonally
1 cup onions, chopped
1/2 cup carrots, julienne
1 1/2 cups sliced mushrooms (canned or fresh)
1 can Bean sprouts
Soy Sauce
2 cups chicken broth
3-4 T. cornstarch
1 T. oil
cooked rice

Saute celery, onions and carrots in oil for 8 minutes. Add chicken strips, mushrooms, soy sauce and 1/4 cup chicken broth. Add drained bean sprouts. In a small pot put the corn starch and mix in the remaining chicken broth until smooth. Cook until thickened then add to vegetable mixture and mix well. Add more soy sauce when serving. Serve over rice.
