Orient Express (Chicken Stir-Fry)

chicken- skinned and boned, cut into pieces
8 C. Veggies: Celery, Broccoli, Carrots, Chinese Cabbage,
Water Chestnuts, Scallions, Pea Pods, Mushrooms,
and Bean sprouts....all fresh if possible.

Heat a wok or large frying pan and add 2T. oil. Cook the chicken quickly until cooked through, and remove from Wok. Keep Wok hot and add 1/2c oil (with a pinch of salt and minced garlic), the Celery, Broccoli and Carrots cook until almost tender. Add the Cabbage, water chestnuts, scallions, Pea Pods and mushrooms. Cook until almost done. Last add the bean sprouts, cook until translucent (if fresh).

After all is cooked add: 1/2 tsp Ginger
1/3 Cup Water
1/2 C. Chicken broth with some corn starch added for thickening
1/4 C. Soy Sauce Add Chicken back into Wok to heat back up. Serve with rice if you want.
