Armand Salad
Serves 2

2 small cloves garlic
Dash salt
Pinch pepper
1/2 teaspoon mayonnaise
2 tablespoons fresh lemon juice
2 tablespoons olive oil
1/3 head romaine lettuce, outer leaves removed
1/3 small head iceberg lettuce, outer leaves removed
3 tablespoons chopped fresh parsley
1/4 sweet white onion, sliced thin
3 tablespoons freshly grated Parmesan cheese
1/2 cup Garlic croutons

To make the dressing: In a salad bowl mash the garlic, salt and pepper to a paste. Add the mayonnaise, continuing to mash until smooth. Mix in the lemon juice and vinegar, if using. Gradually whisk in the olive oil.

Wash, dry and tear lettuces into bite-size pieces. Add lettuces, parsley, onion, and the Parmesan to the bowl. Toss gently until lettuce is coated with dressing. Pile the mixture into shallow salad bowls, sprinkle with a little Parmesan, top each with half the croutons and serve.
