Hello, I'm Val Copeland. On January 5, 2015 I began a new, healthy lifestyle sparked by the book The Starch Solution by Dr. John McDougall. Since then I have eliminated all animal products from my diet, and I eat whole, real, fresh or frozen vegetables, fruit, nuts and seeds and grains. I've been challenging myself to try new recipes and to stay away from processed foods. I refuse to eat any junk for fear of going down that slippery slope into the carbage dump.

Lately I have been reading and studying and watching videos about vegetarian and vegan eating. I'm now convinced that a vegan diet is MY perfect diet. And it's time to kick it into high gear! A vegan diet will allow my body to heal itself from all my previous dietary abuse and from the chemical onslaught of the modern world. Plus not only is it safe and healthy, and the most reasonable diet for me, it has been shown to cure or reverse many diseases and ailments.

It took a lot of steps for me to get here, and no way could I have done this a year ago. It's a process. But now I'm ready. Today I write a new chapter in my life... I am vegan.
